Blend 56 is a proprietary blend developed especially for use as espresso or a base in espresso blends. La Minita combines natural and semi-washed coffees from select fazendas in the Cerrado region to make up the desired profile. The end result is a blend that is balanced and sweet, with fresh noticeable acidity, flavor nuances of clean berries and fruits, and a thick creamy body. Blend 56 shines in espresso preparation; it exhibits a flavor balance between punchy fruit and chewy nut, produces great crema, and has super long, lingering sweetness.

A mountainous region where most of the mayor rivers of the country are born, including the Magdalena, the Cauca and the Patia river. Inza is surrounded by volcanoes, plus the altitude and climate of this region make it perfect for growing specialty coffee. Very small producers tend to their land and hold on to their traditions. Many of them have produced coffee with little or no chemicals for generations. The Pillimue Family, crucial members of the community, led a program to certify 80 producers in organic practices. This small group of producers have become leaders in innovative organic practices, leading workshops in the community in order to re-use a lot of the waste created by the farm and to make bio fertilizers that are cheap and useful.

This coffee is naturally processed. This style of processing consists of picking only ripe cherries and laying them out to dry intact. The coffee must be turned consistently for it to dry evenly and to prevent mold growth. It shined on the cupping table at longer roasting times. Its high density translates to very high acidity in the cup, but lowering the heat application before first crack allows more time for sugars to caramelize and balance its inherent brightness.
This coffee makes a lovely, light and fruity cup.

Coffees in this lot are 100% from women-owned or -managed farms. The women growers are paid a premium to have their lots separated out for this specific offering, and the premiums are used in part by the women of CODECH to support health-initiative programs in the community. Half of the premium is collected for a women's health workshop in the municipality of Concepcion Huista, which has a high infant-mortality rate.

Sometimes we have Bob Ross style happy little accidents at our Roastery. In this case, we accidently blended together our Holiday Blend with our Hometown Blend. Whoops! But upon tasting, we really liked this mix and decided to combine the two into our Staycation Spring Blend (get it? Hometown-Holiday mix?). This organic coffee is a blend of our Light Roast Guatemala and Peru coffees with a little Vienna Roast Colombia thrown in for good measure. We tasted springtime floral notes and hints of black tea in the cup.
